Smoked Asparagus & Salmon Wrap by "MJ"
Ingredients : Baked Salmon fillet , asparagus, mushrooms, minced garlic, liquid smoke, soy sauce, red onion, goat cheese (optional), baby spinach, tomatoes, wheat wrap (burrito size)
Veggie Prep: Snap the bamboo ends off of the asparagus and put in a large dish with the mushrooms. Sprinkle soy sauce over asparagus and mushrooms and add 3 caps of liquid smoke. Mix together with minced garlic. I love garlic so I use several teaspoon full. I made sure there was garlic on pretty much every piece of asparagus. Broil until done. Broiling is optional. You can bake your veggies as well. When done put to the side.
Salmon Prep: Bake the salmon in a separate dish. (I chose not to use seasons. Low sodium.)
In a large bowl with fork, mash salmon into flakes. Add veggies to salmon and mix together well.
Take wheat wrap, put several leaves of baby spinach in the center of wrap. On top of spinach add sliced tomatoes, diced red onions and diced goat cheese. Add a few spoons of salmon mixture. Be sure to not add too much.
Close wrap by folding the bottom up, then folding in the left and right sides and then the top. Wrap in aluminum foil for later or enjoy at that moment.
You can also add any favorite sauces inside before closing wrap, like; ranch dressing, sour cream, honey mustard or guacamole.
